Vadai Curry Recipe:
Ingredients: For Vadai:
- 1 cup urad dal
- 1/4 cup rice flour
- 1 tsp ginger, grated
- 1 tsp green chili, finely chopped
- 1 tsp cumin seeds
- Salt to taste
- Oil for frying
For Curry:
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1/2 cup grated coconut
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- Salt to taste
- Coriander leaves for garnish
Instructions:
For Vadai:
- Soak the urad dal in water for at least 2 hours.
- Drain the water from the urad dal and grind it in a food processor to form a thick paste.
- Add rice flour, ginger, green chili, cumin seeds, and salt to the paste. Mix well to form a dough.
- Heat oil in a deep pan on medium heat.
- Wet your hands with water and take a small portion of the dough, roll it into a ball, and flatten it slightly.
- Make a hole in the center of the flattened ball to form a donut shape.
- Carefully place the vadais in the hot oil and fry them until they turn golden brown.
- Remove from the oil and place them on a paper towel to drain the excess oil.
For Curry:
- In a mixer, grind the grated coconut to form a fine paste.
- In a pan, heat a little oil and add mustard seeds and cumin seeds.
- Once the mustard seeds start to splutter, add the chopped onions to the pan and sauté until they turn translucent.
- Add the chopped tomatoes to the pan and cook until they turn soft.
- Add the coconut paste, turmeric powder, red chili powder, coriander powder, and salt to the pan. Mix well.
- Add water to the pan and let the curry come to a boil.
- Once the curry starts to boil, reduce the heat and let it simmer for 10-15 minutes.
- Add the fried vadais to the curry and let them simmer for another 5-10 minutes.
